Cabbage Fry Recipe

  • Half a small head of cabbage, sliced-Today was a Savory Cabbage called Primavoy
  • 1 TBP of olive oil heated till hot in a cast Iron Frying Pan
  • Dump in your fresh sliced cabbage and don’t touch till you can hear or see the bottom layer is getting a golden brown color to it.. then take your tongs and turn it.
  • Cook about another min or two till the cabbage is just starting to whilt, then put on a little dark soy sauce (about four or five shakes for me), mix and plate..

Now if hubby was home, I would have added a onion, a clove of garlic and finished it with a sprinkle of seame seeds, with a little salt/pepper added.. This meal is super tasty (if you like cabbage) and takes about seven min from start to finish plating, and costs next to nothing to make.

Weigh In Day

 Well, as I listed my goal of 50 pds to lose in a year, I guess I need to include info on this on my blog.. so I do my offical weigh in once a week, on the day we do our girls lunch, and here are my partners in crime.  We have a great lunch, typically homemade promoting one food per week, with each of us making one course, and then bringing it together. We visit about many things but we also set weekly goals and see how they are going.

So this week I was down one pd from last, for a total loss of 41.3 pds, I am not going to post my weight folks, but I will post the amount lost. I still have another four days in my “week” in regards to hubby being gone and my mini goal of three pds per week..

Side note.. Don’t, repeat Don’t drop a ten pd cement block on your foot, it will not help your goal of being more active.. it will however make you limp, give you a nasty bruise and slow you down when it already feels like there is not enough hours in the day..

Had a Craving for a Salmon Sandwhich..

As some of you might know, we had a bang up year for salmon in B.C. this year with one of the biggest returns they have seen in years, I was able to pick up very nice canadian wild Salmon and have been dreaming about what I am going to do with the different peices..

Well, yesteday, I got a real craving for the idea of a fresh Salmon Sandwhich for my breakfast today, its worth noting that I am not a big fan of the salmon they sell in a can, and I didn’t want all the calories from the dressing etc, I wanted to enhance the wonderful flavors of the fish but in no way overwhelm them..

So the first thing, I did was take one half of a salmon out to thraw, then I cut into my portion control peices so about 3 oz each, and placed them into a baggie, with a little olive oil, soya sauce, fresh crushed clove of garlic, and a healthy splash of Balsamic Vinager to cover the peices and then I took out the air and placed in the fridge for about 18 hours or so. 

This morning, took out my trusty well seasoned little cast Iron frying pan, I didn’t feel the need to add more oil, as I had it in the brine, Med heat, and cooked about 2 min max per side.. Here was the results..

I will tell the truth, I devoured the one peice just as you see it on the plate.. so perfertly cooked, moist, flavorful and bursting with flavor.. but for the second piece, I mashed it up with its own juices to create this little breakfast sandwhich..

Nunavut Wildlife

I was so pleased to read about this little local food market that is going to happen, I miss having the access to the local hunters in the north.. Interesting little story for you.. I had just moved to Iqaluit maybe a few weeks at most, and I was out walking around town, just checking things out, I was drawn to a house that had seal hides tacked on the walls, and as I rounded the corner, a older Inuit gentleman was skinning a seal, now I had only ever seen seals a few times in my life and most of them in a water zoo.. so I was very interested, I found his round knife amazing to watch and so I nodded and smiled and he nodded and smiled and started talking to me, only I couldn’t understand as it was not english, and say English only.. and wave him on to continue and he does.. still chattering away at me, and then he slices off a fresh raw thin peice of meat and offers it to me.. Now, you have to understand, I really like trying new food but I had no desire to eat raw seal.. but on the other hand, I felt that it would be culturally rude to refuse this offering.. I smiled and nodded my thanks and slammed back that slimy ahh peice of meat.. He offered me an eyeball next (which I would learn later is considered a treat and honor to be offered) but I will admit that he had me there, I declined as nicely as possable, which made him laugh at me as I said Thank you and continued on my way home. 

I tried whale a number of ways while in the north, including raw, which I did not care for, but I liked it deep fried, it tastes kinda like portabella mushrooms when cooked but in texture its more like pork rinds, your jaws get a good workout.. I miss the char most of all..

It’s been talked about for years, but now it’s going to happen.

The first country food market in years is to take place outside Inuksuk High School on the day of the craft fair on Nov. 27.

“Definitely seal and char and I’m working on caribou and maktaaq and possibly also clams and ptarmigan,” said Willie Hyndman, the market’s organizer.

By Nov. 15, eight Inuit hunters had confirmed they would be selling their catch outside the high school in tents Hyndman’s that Project Nunavut has purchased for the occasion.

Based on the amount of table space available, up to 16 vendors could potentially sell country food to the public.

Hyndman explained that since the harvesters will sell directly to the consumer, it won’t come under the rules about commercial harvests that would apply if they were selling to a supplier.

That means foods like seal — which does not have a commercial quota — will be available. It’s been talked about for years, but now it’s going to happen.

“It’s sort of a northern version of a farmers’ market,” he said.

With seal in season in the Iqaluit region this time of year, Hyndman said he hopes to offer a kind of tasting of the different seals from different parts of Nunavut.

“I’d like to present them side by side for a tasting to compare the different flavours,” he said.

Hyndman said he’s been told that Iqaluit-area seals are particularly tasty because they dive into deep waters to feed.

Seals from Qikiqtarjuaq and Clyde River dine almost exclusively on turbot, which affects their taste.

“There’s definitely a connoisseur culture among the hunters so there’s some great stories about where it comes from and what it eats,” he said.

Other possible fare includes char from Repulse Bay and caribou from Rankin Inlet.

Hyndman said he’s received the blessing of Iqaluit’s Amarok Hunters and Trappers Organization.

What a storm…

Well, its still raining, it rained all last night and all day today, and its a cold bitter rain, with a gusty wind, they say up to sixty km an hour but I think the gusts here are more then that as they can move me when they hit me..

The radio just annouced that thousands locally are without power, that the lights are out on the roads and that between the power outage, the rain an the winds that if you don’t have to leave the house.. don’t.. stay home..

As I listen to this, I am bundling up in my third dry outfit for the day to head back out in the cold and rain, and as I trudge down the soaked paths with the wind so cold that its biting into my face, I figure out that this is my 6th trip outside today, but the calf has to be feed, even she does not want to come out in this weather.. she is bawling from the doorway, I can’t say I blame her.. I have my mug of warm tea, she has her bucket of warm milk.. and I top up her feed and give her a little more hay, before heading back out for the house.. nasty wind.. three layers of outside cloths and it still chilled me.. Think if its the same tomorrow, I will add a wind breaker over the top everything else.

Raw Milk

I am finding myself reading more and more about the debate in regards to raw milk in Canada and also in the states, but more so in Canada.  I have posted a link to the bovine site so yo can if this interest you, read up more on the subject,

The bottom line at the moment is that while you can produce raw milk on your own farm for your own use,  you can not sell, or give away raw milk to anyone! For that matter even if you pasturized your milk, you still can’t sell or give it without a qouta..

Now, I like my raw milk, and I like products I can make from it, and I like so many folks, have had folks ask for raw milk for themselves.. My own personal feels are that its just not worth the risk. I do know how careful I need to be with my own raw milk in order to make sure that it remains a safe item and I would be fearful that others would not take care required.

I like the idea of buying a cow share, and I do hope that will be a legal choice for folks that want access to fresh raw milk, but I do think that those farms should be subject to the same rules as the farms that produce milk for sale to the public, period.. At that point, I say make it what the paying consumer wants.

As for me, I will continue to enjoy my own fresh milk on the farm for our own use only..until such time as the laws are changed to allow otherswise..

Seed Catalogs- Stokes was the first one to arrive

Its Garbage Day today, and so I hauled my bags down to the end of the lane, I am late, normally this done much earlier in the day but its been a busy morning.. and I noticed that the little red flag was up on my mail box..  and in it.. my very first of the year Seed Catalog.. So I know what I will be reading over my lunch, that is simmering on the stove at the moment.. with a little dreaming of what could be next year..

Never trust a wolf in dog hair!

Wow, what a workout.. so went to do my barn chores and thought I would take a few of the hounds with me like I normally do.. well Mr. O who I did not raise and who came to me as adult with a drive that is on the VERY high side, who has taken me a year an half to get him to the point of normally! being trustworth, was a total jerk today.. while the dogs were all happily playing in the pond and running around, and I was doing Girl, He pushed out a corner wire on a gate and was into the next field, and ran the flock out of the barn and moved them into the fence line, and they in mass slammed into the back gate, moving it enough to snap the bottom latch, and out went one of my now ten month old spring ewe lamb with the black bugger hot on her heels.. At this point, I was breathing fire, and my call off finally was heard and Mr. O dropped off, ran back to me and downed..ahhhhhhh.

This should have been the end of it.. I opened the gate so the lamb could come back in, and went to put all the dogs away, but when I got back..no sign of the lamb.. I mean gone.. I counted the sheep three times (always a fun job in itself) and I was missing my lamb.. so walked fence lines, nothing.. finally climbed into the barn loft and looked out over the hundred acres.. NOTHING.. by now I am so worried.. where did she go.. count sheep one more time.. still missing one..

Down to the house to get in the van and see if I can find her.. because if I could not spot her in the field then she has to have made it to the woods god help me.. so down I go.. and sure enough.. she is just at the woods edge looking so scared and spooked.. poor girl.. and she’s making little calls to me.. she knows me but not the van.. cut in front of her.. she won’t let me push her with the van, and spins and bolts past me..  ever wonder how fast a sheep can run, well over 20 miles an hour.. want to know how fast I can run.. Alot! slower.. Run back to the van.. by this time, I’m red faced from running around.. she is fine.. clearly in better shape then me..  Get in front of her the second time, and get out of the van, and turn her around.. get her back out of the bush and into the fields were she spots the barn and decided to head for home.. Thank you!!!

So I am slowly crawling back behind her in the van and she is moving along nicely on the side of the road, my flashers are on.. and crap, someone is coming up behind me.. do they slow down.. no they pass us, freak my girl out who veers right and jumps the ditch, I said a very bad word that starts with F.. Stop the van and cross the ditch, where I slip and fall into the water, remember that rain that has everything sloppy mud.. yup, I am covered up to my thighs at this point in the ditch itself and am soaked from head to toe.. finally get her back on the right path.. but can’t leave the van running on the side of the road, but now I am covered in mud, so grap the garbage bag out of the back and cover the seat and drive home.. Head to the back.. No frickin sheep to be seen..  Back to counting sheep.. finally! after counting them three times, I feed them a line of grain, so that they were all not moving quite as much and my count is right..

Came in the house, striped clothes, which are now in the washer, and had a shower, I had mud everywhere, even my hair, and now I am venting on the blog.. while the Mr. O lays with his head on my foot..sigh… When I have had a cup of tea and am dressed in new warm cloths, I need to head back out to fix that gate latch. All well that ends well as they say..  the sheep is fine and back with the flock with no harm done, and I had my cardo work out for the day!

Turnip Soup Recipe

  • 1 Tbp Oil Olive
  • One large Onion Diced (cooked in oil till soft and clear)
  • 4 med Turnips, peeled and cubed. (speaking in my W.C. Lingo, by Turnip, I mean Rutabaga)
  • 6 cups of chicken broth
  • Salt and Pepper with a pinch of nutmeg.

Cook the above, till turnip is done, then blend either in pot with the hand held or in blender, be careful this will be very hot to work with.. Then put back on the stove and bring up to a simmer..

  • 3 sausage’s taken out of casing if using store bought, cut into tiny pieces, about the size of a tiny meatball dropped into the boiling soup, and cook till done.. I use Lamb.
  • Add 3 cups of chopped arugula, or any other spicy dark green.

Serve up with a dollop of sour cream in the middle or a small amount of cream put over top..this is a stick to your ribs, fill you up treat, with a sweet base with hints of rich meaty goodness..
