Rockin Chili Recipe

So someone asked me for a recipe for Chili, but instead of one recipe, I have decided to cover the basic’s and provide extra idea’s to boot.

There are many kinds of Chili, and a ton of recipes but there are a few things that are needed to make a chili so that list comes first.

Ground meat-Most of the time Chili is made with ground Beef, but don’t stop there, you can make Chili, with ground Chicken/Turkey/Deer/Elk/Bison/Pork/Lamb/Goat..If its ground meat, you can use it.

For a typical large pot I like to use a min of two pds of meat, but some folks and recipes call for one pd(I consider that skimping on the meat but that is just my call), The key to the meat, is that you break it up while its cooking, as you want meaty bits in each spoon.

Onion- I like at least two large onions diced-I typically do the cheap white ones, but you are welcome to use whatever kind of onion you want, I have been known to mix and match depending on what is growing in the garden.

Garlic-Lots of Garlic, at least six cloves or a heaping diced tablespoon, I like to cook that with the meat, depending on how lean the meat is, you might need to add a little oil to cook in, Beef and Pork most likely won’t need this but lamb/Goat or Game meats most likely will.

Beans-Brown Baked Beans, Kidney Beans are the two I considered most needed, once you have those two, you can play to your heart content in regards to what to add or try in regards to other beans.

Tomato’s- diced Tomato’s are a requirement, now you can use tomato juice if you want, or crush tomato’s for the extra but I like V8, I use the whole can that comes on sale for a dollar about 4 times a year, and one small can of tomato paste for thicking.

Regular Extra’s in our house

Mushrooms-Sliced, fresh , canned or dried, does not matter, I Like Mushrooms in the chili

Green Peppers-Diced-Fresh or Dried, I like both of these, sometimes I like to add all four different colors in, Green, Yellow, Red and Orange..Again, alot depends on what is growing in the garden and what I have lots of dried in the cupboard in winter.

A can or bag of Sweet Corn Nibblets is a good thing to add now an again.

Some folks like to add Celery Diced up and cooked with the Meat/onion/Galic, sometimes I do this and sometimes I don’t.

Chili Powder, the backbone of that “taste”, its made out of Chili Peppers, Cumin, Coriander, salt, oregano Garlic and Cloves.

Now the above will look like this when done..

Now that you have this, you can serve it in so many ways, Yes you can just serve up a big bowl of it and enjoy but here are few ways to try it.

  • Chili in a bowl plain
  • Chili in a bowl with a spoon of sour cream on it with a bit of grated Cheese melted on top.
  • Chili in a bowl with Grated Cheese an Fresh Diced Green Onions
  • Chili over top of Mashed Potatos
  • Chili over top Homemade Oven Fries-Make it a deluxe, add the cheese and sourcream.
  • Chili over top of Nacho Chips  or Nacho Chips on the side to dip in.
  • Chili/Cheese/Greens and a little sour cream in a flat bread-rolled up, with a side of green salad.
  • Chili Hot dog anyone
  • Serve it in a homemade bread bowl, kids love to be able to eat the bowl, and can be made as small or as big as required for the folks you are planning on feeding.

So there are some idea’s for you.. Now are you wanting to make some Chili?

  • 2 pds of Ground Meat
  • 2 Large Onions-Peeled and Diced
  • 6 Cloves of Garlic-Peeled and Diced
  • 2 Stocks of Celery- Diced
  • 1 Liter of V8
  • 1 Quart Jar or 1 Extra Large can of Diced Tomato’s
  • 1 small can of tomato Paste
  • 2 cups of fresh sliced mushrooms or 2 regular cans of sliced mushrooms
  • 1 large can of dark baked beans or at least 4 cups of homemade
  • 1 large can of kidney beans or at least 2 cups of homemade
  • a min of 1/4 cup of Chili powder, but I always use at least 1/2 or more myself, if I making for me, more like a cup.. throw in DH, and its half a cup. (remember it will get hotter as it cooks an sits, so don’t go by the taste when first added in)

Cook the meat, onions, garlic, mushrooms (if fresh) and celery together, then add the rest and simmer for 20 min to blend the flavors and serve in many ways.

Chili freezes very well, and can be canned if you have a pressure cooker, follow the directions provided for the longest ingredent given.

Shopping for the no buy- Wk 2

So week two has come to an end and we did well.

Monday to Friday we spent nothing, despite trips out and off the farm.

Saturday was our planned shopping trip. Removing Critter Food, and our new “second hand” gifted round hay bale feeder, which is very much a need for the farm.

We got very few things for ourselves, all food basic’s, nothing extra, and it was only nine items.

Overall, I am very pleased with our results for this week.. It was not easy, it required planning to take things for outings but it was worth it, how did everyone else do?

My Dear Momma wants to know why I never post any of my own short stories or poems on the site, I tried to tell her that each post is like a little short story, which in a way it is.. None the less- for you mom, here is one of my poems..

Sunlight dances on the
hard cold rock of this world
we call home.
We tremble in fear of everything
Why do we live?
What we will do?
How we will die?

Pleasure and Pain intermingle
to the point of ecstasy
And deep inside, the winds of time blows.
uncovering truths locked inside.

The birds sing them
but do we listen
The earth lives them
but do we see
The oceans are them
but do we join
and become one

A few here and there do
but the rest no
We sit and weep bitter tears
of forgiveness for

Got to love good neighbours.

We have been working hard to not waste our hay, so we have been using big panels and trying to clean up the extra’s as needed, but there has been more waste then I would like,  a couple weeks ago, one of our neighbours stopped by for a chat and I said, is there any chance you could put the word out that I am looking for a second hand round hay bale feeder for a reasonable cost.

Well today Farmer R stopped over and he said to come to his farm on saturday, he had tried to see if he could get the one in the field out for us, and it won’t come up, its frozen in solid, so he is giving us a bran new one that he bought on sale, and its just sat in the trailer ever since because he has enough in the fields, so come and get it and its ours..

Wow, that is a gift an half, a brand new one of these costs a pretty penny, turns out it was also his 50th b-day today so I tried to figure out what I had to offer as a present, and told him to wait and ran in the house and got the small bottle of really good rum we had got at christmas but that didn’t get used at all, and gave it to him.. He was surprised, said I didn’t need to do that.. but that he did like a good rum and the odd drink now and again. Hope he enjoy’s it, I am sure the sheep will enjoy having a proper feeder, and that we will like less hay waste.

Winter Challange Meal #9

Dark Day’s Meal #9 was light and o so yummy, go Pizza, The offical food for this meal was sundried plum tomato’s.

The Crust was a homemade buttermilk bread So the only non-local was salt/olive oil/ and the buttermilk powder.

The topping was light but flavorful, pulled roasted rabbit, dried plum tomato’s and st. Alberta old white chedder with onion, with a little montral steak spice and stinging nettle with just a touch of olive oil on the pie itself.

Frugal or just stupid?

I am laughing at the fact that I am going to share this but I know that a ton of the folks that visit the site like to cook, so I am reaching out for your thoughts or comments on this.

I cooked off a whole turkey, and I have been using it up, I made this dish and that dish and made broth with the bones but you can only eat so much turkey and then you want something different, somehow one of the legs got left in the back of the fridge.. now I keep my fridge cold, but its been a number of days, I smelled it, its not bad but its not smelling fresh either.. I touch it with clean hands, it feels right.. Of course if I had remembered it, freezing it would have been the way to go for safety.

So being me, I pick the skin off, it goes to the hounds, and pull the meat, cut it up and put it to start a soup that I will boil well and simmer for a few hours while I cook it, I’m making a nice turkey, rice, veggie soup..

Now here is the catch, I would not be willing to pull that turkey and serve it on a sandwhich because its just a bit off.. but I am more then willing to use it in a long cooking soup or stew..

So as the post titles says.. am I just really Frugal or just Stupid 😉 ?

ps, Please don’t just qoute what the standard line would be.. if in doubt, throw it out.. instead give me a honest view of what you would do in your own home..

Weigh in week 6/11

Well, its been a off-week, I am not sick, I don’t have any real sign of allergies (eye’s itching, nose running, feeling like I have stuffy ears) which I tend to when its allgery season on the farm..but I have also not felt right either. I’m moody.. no that’s not really fair, be honest, I am in a good mood but it can switch in a second to the dark side.

According to my scale, I have gained .02 pds, which means I am the same as last week, no difference really, at 46.6 pds lost since Feb 2010. But this last month has sucked at any real loss, and I am going to have to step up my game.

Goals for this past week.

  • Food Journel daily -yes
  • Sleep as needed including allowing myself naps -yes
  • Drink my jug of water daily -yes
  • No eating after eight yes to 5 out of 7
  • Eat a bigger breakfast with a smaller supper -No, I have been craving carbs and overeating at dinner time!
  • Make turkey/veggie/barley soup for lunches. -yes, and they are good..
  • Finish off my Bacon and get it curing. -Done but I am sure that pork rind didn’t help my diet, but its so darn good!
  • Twice this week work on staff training with DH- O ya, I needed to be able to beat the heck of that peice of wood, sometimes it wonderful to be aggessive in a safe manner and the workout and sweat running a good thing.. not so good the new bruise I have were I didn’t block properly.. ouch..

Goals for this coming week..

  • Get hubby to take care of baby lamb for at least one day on weekend, so I can sleep more then three hours between feedings.
  • Cut out a solid 100 calories per day on the food journal
  • Drink my water jug daily
  • Hot wax my hands to see if that will help with the soreness
  • Hot wax my feet as a treat
  • Get outside to at least one fun winter event
  • No eating after eight
  • Do more stretches daily

Edible Wild Plants Book Review

 Peterson Field Guide Of Eastern and Central North America. by Lee Allen Peterson

I love this book, its small enough to be taken into the field with you, its details are really good, but there are two things about this book that take it from a well done edible plant book to a must have.

a), They have a section on what to look for in each area you are in, so if you are in a swampy area, you look up in the swampy area to see what is most likely to grow there, which brings about

b) they tell you what is typically found per season in each area, with a note for the plants pages to go look things up.

Each plant has a list of what can be done with it. If you want to do any kind of foraging, I would recommend this book for your shelf..
