Sunday Breakfasts- Pork Patties

These are served up as just delightful juicy pork patties..

  • One pound of ground pork
  • Half a small onion very finely minced or grated
  • * tsp of grated or very finely minced pepper is very nice, any color
  • * Tsp of grate or very finely minced mushroom is quite lovely as well
  • 1/2 tsp of salt
  • 1/2 tsp of freshly ground black pepper or preground if you do not have freshly ground
  • 1/2 of any green herb of your choice, you can use dried nettles, or horseradish, or basil, or sage.. each one will change the flavour a bit but do give them a try.
  • 1/2 tsp of keens dried mustard
  • or
  • 1/2 tsp of crushed chili flakes  but not both unless you like a bit of kick to your meat.

Mix it all together in a bowl, make patties and make them nice and flat and even for cooking, fry or bake them flipping once till cooked though.

Serve as is on the side, or drizzle a little sauce on them, Milk Gravy, or a meat sausage or in this case some yolk sauce!

In order to put this breakfast together, it required one slice of butter toast, one pork sausage patty topped with one x-large farm fresh dippy egg (hubby had his eggs scrambled and it worked just as well) of course you are welcome to split them up and serve them on the plate per your family wants but this is a farmgal openfaced much healthy version of a egg and sausage mcmuffin 😛

No Buy Feb 2015 – Week two overview

This was posted on payday this week by me on facebook..

Me.. this is no fun, no buy feb might be working but there are so few little things that make me all Oh.. A new movie came out, a favorite authers book come out next week, lets go for a tims coffee and hit the dollar store.. I feel a twenty burning a hole in my purse.. No, hey Miss T lets go to church basement an see what second hand teasures we can find..

Nope.. none of it.. instead I have time to do a set up and photograph session after grooming my guinea pig..

Me: what do you mean that is the last jar of that style of canned pinnapple, do I not have at least a case of it.. hmmm, you mean I did pinapple before I hurt myself last… that would in july.. ok then..

Me: Noooooooo my carrots froze.. whimper.. growl.. glare and feed to the pigs.. give sidewise glance at the bag after bag of frozen beets.. why did hubby not put up more frozen carrots.. o wait he did but we lost them when the freezer went… grrrrr

New message in inbox eve langlais  one of my favorite romance authers ( who also local to me and who I will get to meet at Romance the Capital) new book Grizzly love is coming out. Now you have to understand I ADORE this series, hot shifters, smart and tough pretty and curvy women and a mix of sass and humor to delight me..  I have been rooting for this youngin (compared to older men) to find his sweetheart and now I am going get to wait till march to buy it but when I do it will be a sit and read first time in one go

Ok,, All kidding put on hold.. none of the above are going to make or break me..

Dumplings Recipe and advice on making them

The recipe is as easy as they come..

One cup of flour, 2 tsp of baking powder, a pinch of salt, 1 tsp of sugar (if you want) 1 tbsp. of cold butter or lard or tallow and half cup to 3-4th of a cup of cold whole milk.. its a tricky one, half a cup is not enough, and 3-4ths is to much but if you have to pick on, then go with 3-4th a cup..

Cut your butter with a knife into little pats, then blend it with your fingers in the same way I taught in regards to your pie dough mixing, or use a pastry cutter, your choice, DO NOT Mix this with a spoon!

Once rubbed in and all the above are mixed well together, then make a well in the center of your flour and add your milk

Mix together with a wooden type spoon till it comes together enough to clear the sides of the bowl.. Do not overmix, do not kneed, do not turn out onto a floured surface and work it..  REPEAT.. just till it comes together! I know, I know but its important.. 🙂

Then get two soup spoons or two tables spoons and cut it over into chunks..

After they are all done it should look something like this.. in the bowl.

Now we have tender balls of dough ready to put in our stew, but we need to talk about the stew and the stove for min.. So we need to have our stew in a lovely pot that is ideally great at keeping a steady simmer and that has a very nice tight fitting lid, We can have our pot anywhere from half to two thirds full but we need to have it no more.. otherwise, our dumplings will not have the required room to lift, puff and steam.

So play around before making dumplings and find out what setting you need for your stove and that pot in regards to a steady hard simmer, and by that I mean, you should be able to see the simmer breaking bubbles over the coils but not boiling the whole pot

Then and only then, do we lift each ball, give it a palm swirl to even it outs its edges and with our wood spoon, place it into the stew, it goes down and into the stew on a sideways slide off the spoon into its spot..

Yes you read that right, Spot.. there is a plan on how those dumplings need to go in.. Trust me on this.. I have made many dumplings and this is the plan that will give you the best! ones. If you want smaller feel free to make one for the middle as well.

Then put the lid on and set the timer for 12 min..  DO not even think about peeking or checking on this yummies..  12 min, is the average for the size I make, If smaller but crowded, 12 in, if you went four huge ones.. 14 min is the most I have ever needed and done..

Now here is the next trick, lift the lids and then get them out of the pot.. Do not! leave them in the stew.. out and onto a plate with a bit of nice drippings on the bottom half of each one..

Then serve your stew and place the dumpling in the bowl.. yum, but did it turn out fluffy!

O ya, doubled in size, soft and dumpling on the outside, fluffy and light and just a hint of sweet on the side.. delightfully..  Now you can also add herbs to your dumplings for different flavour changes.

Health Report– an homework

So I had back to back appointments at the doctors office, next round of things that needed to be done to be sent to the fertility clinic, confirmed that all other tests are back and normal or negative..

I am thrilled to say my lungs have healed themselves and they are back to normal, However it was requested that due to my weight that I at least meet and consider working with their dietitian, while their program used to be for only for those with medical needs, they have opened it up to the obese.

Now I had a three week window between my first meet and greet and when it was booked, and so I thought, alright, I remember meeting with one at the age of 15, and she pretty much said, eat under this for calories, here is four things for each meal and a list of ten snacks and that was that..

So I went hmm, given I eat off the farm, and I knew I was not going to town to by salad greens, I figured that was my first hurtle and we would see if she even wanted to work with me after I laid it out.. eat off the farm, will not go to gym, farm only.. limited to weds for the vehicle etc.

I spent the three weeks being productive in my own way, by writing things down without changing it as much as possible so I could give a honest overview of both what I was eating and what I was doing in general on the farm etc.

Well was I in for a surprise.

Introduced myself and did my planned, this is what I need if you want to work with me, she laughed.. said, ok, this is what I need from you if you want to work with me! I listened, I laughed and went OK

Let just say, I do not know if she is the norm but she made me laugh, she also gave me homework.. more on that in a bit..

Her basic rules made me laugh.

I am not going to tell you what to eat..

I will not tell you how much to eat

I am not going to tell you to walk or workout out x amount of times a week etc.

I am not even going to tell you to get on the scale if you do not want to each time you visit..

So by now are you thinking.. well then what did she want..

The short answer.. Goals

She said.. Give me one longer term goal that you really want to make happen that your current weight is stopping you from doing..

Easy.. So easy to answer

I want to train and ride Caleb in either a 12.5 mile or a 25 mile baby endurance ride..

She said, perfect! that is a perfect goal.. no weight number to attach to it, instead just a dream and goal.. Ok then

So she said, ok so what is one thing or one area that is a problem for me..

Easy, so easy to answer..

Eating between 3 to 5 when bored, housework done, chores done, waiting for hubby, starting to really want someone to visit with other then a critter with fur, and I am in and out of the kitchen preparing food..

Eating when bored is clearly bad, snacking a first supper before then sitting down and eating supper with hubby.. BAD

That is my homework for the next two weeks (she is going on holiday, and when she gets back I see her weekly for the first month and then we figure out if weekly or bi-weekly is best for our meetings)

I need to write down how I felt before I eat when bored and after I eat when bored..

I need to write down how I felt when bored and I picked a non-food way to deal with it both before and after..

Ok then, I can do that..

Challenge is to NOT snack or eat when bored-not hungry for the weekdays..  and see how many days a week I can not do it, replace it etc.

I found it to be more of a food related shrink session then anything I remember from the visit (single) to the hospital one..

I was very surprised but not unpleased to find out that she wants regular weekly or bi-weekly meetings, because lets face it, if you want it to work, you do need to have that kind of commitment.

I did have one laugh, she thinks one pound of weight loss per week is ideal, I laughed and said, expect it faster then that when I start gardening and riding again.. but it will soon hit that magic holding spot afterwards.

While I clearly believe that the way I eat is the reason that my body is healing and my overall general health is so good, my weight is stopping me from doing things I want to do in my life and that is not acceptable to me.. So lets see if I can in fact make a change for the better.

Reader Question- The Farm

Hi Guys, I had a reader make a comment with a question that got my wheels spinning, it went along the lines of, you are so lucky (yes, I am) that you have the farm and do so many things with it, but do you in fact make money at it.

Well, I answered nicely even as I thought, that’s a personal question, but to be fair, I did not get asked for amounts just if we did or not..

The Short answer is very simple.. No

I farmgal never do better then break even at times if you look at the farm as a whole..

The middle answer is.. Sort of, depending on the part of the farm we look at or the goal of the program..

A excellent example of that is sell a few extra lambs as farmgate to cover the cost of hauling and butchering on the lamb we eat ourselves.

While its not a tradional way to look at it, it works well for us, often I raise just enough extra to cover some part of the costs for our own use.

The Longer Answer is far more tricky, how do you figure out what the returns are in regards to my own food produced, be it meat, eggs, milk, fruits and veggies, be it herbs, or medical plants, be it the time to make soaps, to knit, to work hides, to blog..

How do you put a price on a lifestyle choice, I am not sure you can, but to that I say Yes!

Yes indeed as a person who is living the life she wants

Yes to being a land owner that does not really have a lawn but instead has a small holding.

Yes to raising my own food in all forms

Yes to reducing my chemical needs on the land and using old fashioned methods instead

Yes to taking back my ability to eat meat and KNOW how it was raised

Yes to knowing that I have created a space for millions and Billions of little critters and things to thrive, with the strongest things come at them is either a sheeps teeth, a birds beak, or our hands wrestling them to the ground..

NO, I am not a hobby Farmer… This is not a hobby.. I work at it full time!

NO, I am not a farmer, we do not make a living or even part of a living on this wonderful special piece of land we live on.

N0, I am not a homesteader, This land has been cleared and used for over a hundred years on the farm, the house has three different parts to it, the big Barn is OLD! and the little barn is at least 40 plus..  I certainly did not build this place up (But I have planted a good deal of trees 🙂

But I am a proud stay at home wife and landowner! I am blessed to be a gardener, blessed to be a caretaker of livestock, Blessed to pasture, Blessed to buildings and fences and so much more..

Everyone does it, they say.. what do you want to be when you grow up.. and that sweet girl even at the age of six on Turp, would say, I want to get married, have children, and live on the land.. I wanted chickens and horses, a pack of hounds and farm cats.

I  also wanted to travel and learn and do all kinds of other things as well.. but I grew up to have the very life I dreamed off as a child, I thought I had a idea having been on the farm at the work it would be..

HaHa, not.. I had no idea just how much work it would be

Dreams to me should require work.. A gift is just that a Gift, do what you will with it..

But a DREAM, now that is something you feel with your spirit and  create with your own will.. and then you work hard every single day to keep true to it

I honestly never knew that having a little pig aka guinea pig or pigs would turn out to be such a hoot.. I will admit that I would get a short haired one next time as the amount of grooming and trimming that little miss p takes is more then I thought it would be..

I would also only ever get one sex at a time on the farm, now I do not know if it is sex related or if its just who they are.. but the pet is Miss Puddin, she sings, she whistles, she has five very different sounds she makes to tell me what she would like as I walk by, she sleeps with the cats, she plays and she is a total sweetheart, she snuggles and makes a happy purr sound..

Chickens- Egg production overview 2015- Jan

The intent of working to keep track of this is for a few reasons, in part because this is a tracking year!

A) General overview of costs of the hens vs the return impute on the eggs, (I am unsure how to factor in manure for gardens etc)

B) its linked directly to my plans to do very detailed grow out costs of chicks, both home hatched and hatchery bought.  I am going to also talk about tricks for lowering the food cost bill.

So stats you need to start out with..

We have 13 chickcns, 11 hens and 2 roosters, the youngest hen is three this year, the oldest hen is eight..  All hens moulted this fall and are in good feather at this time. Its a mixed breed flock, sll are medium to large to X-large egg layers, the colors range from pale green to dark brown, all shades of browns inbetween

Given my girls age, the chicken books tell me that I can with the bigger breeds expect on average 4 eggs per hen per week..

So my max production for the month could have been.. 132

Which means in the cold and dark my girls only produced at 48 percent of their possible production.

Jan- Lean month indeed.. Bitter cold, stubborn me, who did not want to turn on the heat lamps until it below 20 which did not happen until the second week of jan but finally did and the production went up but so will the power bill.

Eggs, 64 chicken eggs

equals: 5.3 dozen.

Store, local large brown eggs 3.29 per dozen = 16.45

Local price per my readers- 6 dollars a dozen=32

* ok, having heard from local city to me, local to province and across Canada, it would appear our local battery produced eggs at the first town from me is cheap, cheap, everyone in comments on log or facebook appear to agree, that it should 6 dollars a dozen.. so be it!

Now lets talk about feed shall we..

The books say, that my  hens need to eat 1.5 pounds of feed per week, (and I will assume my boys eat the same amount) so

13 birds at 1.5 pounds per week is..19.5 pounds of feed for my laying flock.

I currently pay 13 cents per pound of bird feed so

One weeks worth of feed is 2.54 cents

Therefor a months worth of feed is 10.14 cents

Not bad, not bad at all..

But if you had to buy that same feed at the feed store price..  it would be 36 cents per pound, for a total of 28.08

Now because its winter, I also need to be putting down bedding regular at a full straw square bale per week, for a total of four bales.

Each bale cost 3 dollars for a total of 12 dollars in bedding.. Opps, there went my profit or even my break even.. (wink)

* I am not going to include impute costs of structures etc, they came with the farm and have been around for years, but if you are a first time chicken owner, you will need to also figure out the basics on what it will cost you to build a chicken coop, pen and so forth.

Top to Bottom Challange

So for the next ten weeks I am going to add in a heavy duty house cleaning, I missed the fall cleaning, and I have both wow garden plans and wait for it..

Qoute. Daughter, you are the only one I know that can make a meal, just enough for supper and one meal for hubbies lunch..

hmmm .. ok then, Its been formally requested that I keep more prepared food available..

Maybe, I should bake something extra each week and put it away..

Mom likes lots of choices, I tend to make one thing and then we eat it, and then I make something else, so while there would be cookies cake or muffins..  there tends to only be one, mom likes something for ten tea break, somethings else on the 3 tea break and not only dessert but evening coffee..
