For those that don’t like Rhubarb, please forgive that there are going to be a number of posts on how to use this plant over the next few weeks, we will look at canning rhubarb fruits, making Rhubarb Relish, among others but one of the most famous in our area is Strawberry Rhubarb Pie.

Fresh picked Rhubarb and a some good looking Farm Boy fresh strawberries to go together, washed, sliced and diced.
Mixed in a cup of sugar, 1/4 cup of flour, a pinch of nutmeg an ginger all mixed nicely, and then into the pastry dough and ready for the oven, I will add a photo later of the finished pie.

Strawberry-rhubarb is pretty popular here, but usually I just make straight up rhubarb – just sugar, an egg and the ‘barb. That’s how grandma made it and so is of course what everyone craves. Once the currants come on they’ll get me to make a few currant custard pies because, again, that’s what grandma did. 🙂
Egg? Egg in the filling for the rhubarb pie? ok, proper recipe on that one please an thanks, are you cooking it before you fill the pie? Got to try this one..
hmmm, any chance of that current custard pie recipe going to be coming up on your site around that time, your maple tartlets looked so yummy, going to try making them in the near future.
Grandma Sandybanks’ Rhubarb Pie
2 1/2 cups cut up rhubarb
2 eggs (oops, I thought it was one, ha ha)
1 cup white sugar
1 tablespoon butter
2 tablespoons flour
pinch of salt
Stir it all together and pour into an unbaked pie shell & cover with a top.
Enjoy, I’ve got ribbons at the fair with this. 🙂

Mom always uses two eggs in the rhubarb pie just was reading your comment and had too drop a note.
