Easy Sweet Potato Soup..

Honestly the easiest soup you will ever make, roast off your sweet potato if possable as it will increase a depth of flavour an sweetness but if you can’t do that, simmer it peeled and cut up into cubes, drain, set aside the water for use in something else at a later date.. mash the sweet potato.. measure it out, add equal amount of a white bone broth to it, a pinch of salt, a pinch of pepper, a bit of nutmeg or all spice, a walnut size pat of butter and heat it though, serve as is or with a dollop of sour cream or yogurt or a swirl of heavy cream.

You could blend it if you wanted it really smooth but its good as it is with just the well mashed sweet potato..

March’s Plant Challange is Chaga!

chaga

Photo Credit on this comes from Wikipeda

Chaga is a growth (its a type of fungal but its not a mushroom in the normal sense) It can be found locally in most of canada if you are living somewhere where you can find birch, you more likely to find them, they are ideally taken off, Ground into a powder for storage and used for making tea’s for drinking..

Have you ever found or used Chaga? If so, what is your favorite proportions, I find it goes down best as a sweeten with honey shot, not a sipping tea..

March 2013-Odd Bits Challange- Pork Jowl

Well, both my double dare ya challange and my odd-bits in march is a bit late but its been crazy and the weather has not been helping..

None the less Pork Jowl is my March odd bit.. now last year I made Pork Jowls into a form of bacon..

Now that was a cured jowl and not one of my own homeraised piggies, but this was a big old jowl from Angelo (and of course I have second one yet in the freezer) and o it looked so different just at first blush, tons more meat on this one, less fat for sure..

I didn’t cure it, I decided that I would raise spice rub it on both sides, and slow roast it on a bed and with a covering of onions.

This is the pulled meat with the fat removed, the mashed onions and the wonderful rich and full bodied broth that was created.. Delightful! Now comes the really interesting part, check out the two differnet colors on this jowl..

When was the last time say pork be so dark as the meat on the left, what was very interesting to me, is that some ws typical on the right..hmm I pulled the meat apart and used some as fresh eating for my lunch with the rest put aside to me pulled and mixed into filling.. some pickles, some lovely mayo, some chopped fresh peppers, served up with some greens on freshly made flat breads.. Going to be so yum!

Happy Easter!

Wishing you all a wonderful Easter, may it be filled with love, laughs, family and friends!

This morning in the bird pen, o the delights that awaited me.. Lots of Brown eggs, pretty green egg, lovely big speckled turkey egg and my first big goose egg!

2013-03-31 2013-03-31 001 003 (500x375)

This is Mel, he is a blue Spash Jersey Giant Rooster, he is eight months old at this time, and I think he will add lots of meat to my next generation for the table, as well as carrying the genes for extra large brown eggs.

Pretty Girl..

2013-03-31 2013-03-31 001 002 (500x375)

Do you run a mixed flock or do you keep all your birds apart based on breeds, by this I mean do you allow your geese to mix with your chickens etc.. I have to admit that I don’t allow mixing of babies, they are always raised on their own, and my grow out spring/summer/fall pens are ducks, chickens, turkey’s etc but after the big fall butcher out, in winter, the keepers, the lucky overwinter birds all become one big flock in the big pen and the big indoor winter pen..

We are soon getting to the time of year where the grow out summer pens will melt out and birds in breeding sets will be moved into their own area’s and allowed to start that wonderful spring dance of mating and then laying/setting and ideally hatching out some lovely babies for me!

The Yearly Bird Sale and my two buck buy record is intact!

Well, the morning started way to early but it was off and up and out the door to the best bird sale in a three hour drive around us, and thankfully its only half an hour away!

As always a awesome sale.. I had  gone with a list of things I wanted and I came home with my list and a few more..all under budget!

So on the list was.. One big dual purpose brown egg laying rooster around the eight month to a year in age, one new doe rabbit, and one new drake to match up with Jackie..

What I came home with was ..

TWO new does (unrelated) for Blue the Buck, one is called Tippy Toes, and the other one is Adele..

Two New roo’s, one huge! eight month old blue splashed Jersery Giant! going by the call name of Captain Mel (this boy just took over the roost in one fell swoop.. and one not quite as massive but still big a old fashion multi-purpose Faverolles boy called Wash (yes, I named them after Firefly characters).. He was quite happy to take second place, such a stunning bird!

Then came the drakes, one boy called JR for Jackie, and the other called Spaz for Apple, and they came from the same breeder and so are being buds at the moment but I will split them up with their own girl and we will go from there..

But the BIG surprise, yup, I found a mate for Honk, a lovely coming year old female of the same breed, who is just the right age to find and bond with a mate, and I’m calling her Hiss.. Honk and Hiss, how cute is that!

Still going to get my goslings as planned but I can now also look forward to hopefully having some hatch out on the farm itself..

All and all, a very productive day! Pictures will come another day!

An the Earth Rose up…

or I fell down.. hmmm, that sounds more like it..  Well after a great morning of puttering, crossbow target practice, I decided I wanted to go riding, Bit work was fab, tacking awesome..  even lining her up on the mounting block good, she was focused and seemed to be looking forward to going out as much as me..

And there was the issue, I mounted up and she walked out on me.. now I have read about this issue, I even remember it to point with other horses and I have seen it enough times to know what it, but Brandy never does it.. she is rock solid normally at the mount up..

But not today, today as soon as the weight went in and I had a leg over, she was walking out under me.. now if I had better balance, better upper body strength to my overall body mass, I would have been able to finish that pull across and things would have been fine..

But it was not meant to be, I pulled on the horn and gravity folks did the rest, but instict also kicked in, and I was able to come off and over the saddle, and (THANK YOU DAD!!!! for those wonderful new crooked stirrups!!!!) and once I was coming back down, take my foot out of my stirrup and at that point I let go, and landed full body contact in about 8inchs to a foot of mud… Splat!

2012-12-24 2012-12-24 107 001 (500x495)

At which point, Brandy stops moving and goes, you ok? overall, I am ok, a bit sore but no where near what it could be, and while DH had the camera so that he could get a nice photo of me riding for you.. instead, he got the one above..

In a way, as strange as this might seem, it was a good thing, I knew that at some point I would take a fall when working with the horse and I am been very worried about what would happen in a fall at my weight.. the answer kinda surprises me, at least this time.. not much different then if I was less in weight, my old training and instinct kicked in.

On the other hand, it just drives home the fact that I really need to keep going down on that scale and I need to increase my strength and overall flexablity..  As DH said.. If this happened on the trail while camping, you have! to get back on and finish the ride..

Lots of work to be done!

Workouts in Place..

Its spring, and I will just go ahead and admit it, the blog is going to be filled with seeds, plants, gardens, greenhoues, chicks, new buns and lots of Brandy.. I  promise to throw in a fair number of new recipes, as well as keeping up on my challanges..

I have rocked it in the family weight loss challange, having dropped over 30 pds in three months and I am on the roll and just want to keep it going in that direction, I can’t say that I feel great and full of energy, that would be a false, I have great days and good days and days where I am so wore that I am in bed after supper.. yet one day, I went to be before supper and just missed it..

Each day I am spending more time outside and its awesome.. this morning was one of those, yes I popped in and out of the house, and I popped on and off the computer but most of the morning was spent outside.. I hauled water to big barn, milked and feed Kermit, what a sweet pig, I will have to remind myself that he is going to the freezer but for now, I am just going to enjoy his friendly sweet temperment, its a joy to watch a piglet do a full body wiggle of joy when drinking his fresh warm milk..

I hauled hay and raked up extra’s, I dumped water tubs and filled them again, let birds out, bred the rabbit, tidied up hutches and figure out what needs a repair from winter, groomed the cow, groomed and did the horses’s feet, worked on leaving her out in cross ties in a new place today, she was tied out in my mini-woods, (so far this week, she has been tied in the barn, at the hay feeder, to a tree in the small pasture and today in the mini-forest) she was tacked up and worked, and then as a nice cool down, we took a nice long road walk together, watered and moved all the seedling trays, planted more seeds, hauled out glass frames to cover raised beds, helped drain out a bed that is holding water, and figured out what would need to be done to allow better drainage.

Turned a small compost pile, and took the shovel and cleaned off the cement front walkway, and shoveled a bit more in the one area of the bird pens, as soon as possable, I want at least one or two of those pens ready..

I did a number of stretched today while working with Brandy and its interesting to me to see her reactions to me doing stretches and relaxing body parts, she follows suit.. its was kinda like doing a horse yoga.. I even got her to sigh and do a full body shake out with me..

2012-12-24 2012-12-24 104 003 (496x500)

Lots and lots of things left to do, spring has hit and its mud, poo and sunshine with lots of snow to melt out, but its coming up on a four day weekend and while I know that we will not be hitting the gym in any sense of what that means, i assure you the farm workouts will be regular and steady..

Got plans to make a lovely rolled stuffed steak for supper tonight, thinking sheep cream cheese, greens with apricot jam in a beef steak roll served with a side of homefries..

Steak with Mango, Greens in a sauce..

2 nice steaks ( I made these with beef but it would work with lamb chops or pork chops), your choice on what kind, in this case it was round steaks, thaw them out in the fridge, 1 large ripe mango, 1 large onion, purple or white, 1 red bell pepper and four cups of mixed greens (ideally with some bitters in there), 1/4th cup of a white wine vinager, 1 heaping Tbsp of honey or Brown sugar (your choice), a good sprinkle of Sea Salt of your choice, a bit of oil to start the cast iron pan.

Start your steaks first, with a bit of fat to start ( I used my home rendered lard) get a good sear on the one side, then flip, and add the peeled and diced mango, onion, pepper, vinager, sweeter and salt, turn down your heat and let it do a low simmer and blend, when your steaks are not sweating pink (or just slightly pink if that is something you like) add your four cups of mixed greens and wilt them in..

Very colorful and yummy.. and its supper time and I am without camera at the moment. I will make it again in the future and take a photo at that time..

Take out your steaks, Split the rest of the dish on your plate and put your steak on top.. served with a lovely side of Acorn Squash..
