Sausage Making at Big Brothers.. Bear Sausage recipe

My big Brother lives in the northern part of alberta and he is a hunter, so if you are non-hunting, please stop reading now LOL, no really its not that bad but just giving a heads up, he is black bear country and he has tags for two bear per year, which tells you that there is a lot of black bear in his neck of the woods, he has a legal registered Bear Bait barrel..

Big Brother hunted with a bow.. and he is a dam fine shot.. Now the thing that surprised me a tiny bit is that when you are hunting for bear, you are in fact hunting for the hide, per the rules, not the meat.

It is unlawful to:

  • allow the skin of any bear to be wasted, destroyed, spoiled, or abandoned. See exception for salvaging skin. Click here for Access for Control of Livestock Predation.
  • hunt a black bear under the age of one year or a female black bear accompanied by a cub under the age of one year.

However Big Brother did in fact bring home a goodly amount of the meat as well, and so when I arrived we were able to make Bear Jerky (a very interesting meat to dry, its lean enough but has a very clear different taste, the texture was good but it has a “liver” taste to it as it cures out and as a after flavour on the meat alone, so this ended up spiced up and then wow, it was just awesome, some was done in the oven, for a rich more moist jerky and the rest was done in the smoker at a lower and slower heat but allowed to get really nice and dry..  just yummy! a big bowl of bear jerky sat on the counter and ended up on trip etc.

Momma had gotten a cookbook (one of many) on the trip and it had a interesting recipe for a polish pork sausage that we made, I didn’t like it, it was just wrong in texture and taste to me for a breakfast sausage but thankfully others liked it because we made like 28 pounds or so of it.

But we also had some bear that we could do up, so it was a true farmgal sausage, no formal recipe at all, ten pounds of super cold bear, five pounds of fatty pork, two huge big onions, 2 pounds of dried and sweetened cranberries, a bottle of white wine and the spices and cure needed for a batch of mild pepperettes.

This combo was taken off a recipe I had done for a duck breast sausage, the bear has that same super dark full dark meat and I figured if it would work for geese breast or my big duck, then the odds are it would work for the bear..

Big Brother has a set up that just makes me drool, he has all the brought and proper things that I have old or smaller versions of, but the good thing about getting to use the equipment, was that I found what I would not want, what I REALLY DO want and what I change in regards to size etc..  I want a version of his grinder, that thing is amazing, I would like a smaller version of his stuffer, and his smoker is amazing!

We make smaller breakfast sausages for the freezer, and then we did so many links to be smoked for me, and then the rest was made up into burgers, I loved the burger, it had a very different taste then the sausage or the cured and smoked ones did.

It was a interesting  result, the first bite, the texture is good, the smoke is there but you get this bite of flavour that your taste buds go huh..(its the bear, I think) and then as the flavours come out in the meat, you find yourself going back for more and the afterflavours are awesome.

Now when fresh made the wine was a bit strong but those that have tried the dried and smoked, find it has a nice blend in total and can’t tell that I used the wine vs having added a bit of soy sauce, both will give you that acid bite to the dish.

While we did the one batch just us, when it came to the bear sausage, big brother was needed on the phone and so neice HP the older of the two stepped up and gave aunty a helping hand, we made 22 together and little sister helped make one as well.. good job girls!

So much more fun when you can visit and share the work and event wih others while doing it, often even while making sausage, I work alone on the farm, dh being at work off the farm, so this was a real treat for me!

Some fun time on the quads and in the bush..

We also have a slower way to travel but dang it can go over and though pretty much anything, be it swamp, rivers, sand dunes, tree’s just to name a few.. We did a ride down to the lake, we did a ride to some of Big Brothers hunting grounds, he showed me a platform that he made and had used this season, and then we took a number of hours in the bush on a loop, we hunted for chaga and I brought home some form of lecin, which I indeed to use to make a color dye on wool and then use it to make some wonderful felted soaps with a deep personal connected for gifts back for the family.

Harvest Honey Soap

Well, its not the best soap I have ever made but not the worst either LOL, now how’s that for speaking highly of something..

I made a batch of soap before I left, and just finished up getting it ready today, it has some good points, amazing scent (Honey Almond) and its a soft warm brown, its a very rustic looking soap and I think it would have been so much better if I have swirled it, but it is what it is! Its half cold process cured and half gelled, ideally, you want it one way or the other, I was going for a full gell and I am a bit surprised that it didn’t do that, I have read over and over that honey cures out hot, when it comes to soap making, you are always always learning!

it was made with local Ontario wine, and local raw honey, I was expecting it being made of a base of lard and cococnut oil to be a very very hard soap bar, but instead its a soft bar of soap, it cleans well, leaves your hands very soft and the scent is lovely but its much more of a soft melting soap then I thought it would be.. granted it does have another three to five week cure left on it.

Love the new wavy soap cutter I got, it would so well!

O me, O my, Wasn’t that a Party! I’m Back!!

What an amazing trip, I was gone off the farm for three weeks, two weeks was filled with travel, family, new country and amazing times, the last week week was filled with being sick, sick enough that we were concerned that I would need to rebook my flight but I really wanted to come home on time, so I was one of those really bad people that took meds and flew sick..

I have so much I want to share and write about on the blog, I have new/old books, new tools, new old things I found at odd little second hand shops, I traveled in bear country and I saw some amazing places! I got to spend wonderful and needed time with my nieces, o my, they are growing so so fast, I got to find out some new things on my only nephew, turns out that he is a walking dead and big bang fan! awesome, going to get him a signed walking dead by norman at the coming pop con that I will be attending in the future.

The hubbies has held down the farm, he worked from home two days a week, plus took a day off and of course had a three day weekend in there as well, he got some really great things done, he took down and redid my laundry room to which I say.. wow and I like, so many more shelves, so many more places to hang cloths, more baskets to store thing in.. awesome.. he also did some roof fixing (I am glad its done, but was very unhappy that he was up there fixing it while no one was home), he worked in the big barn, he built a new big very very low big hound day bed for our old snort dog, she can’t get up on the couch now even with the stairs we had built for the older hounds to safely get up and down, and she clearly loves it.

He spend a fair amount of time working on the garden stuff as well, and that was on top of working on his formal job, and doing both his and mine daily chores, so trust me when I say! Way to go my hard working wonderful man!

The coming days and weeks will be filled with all kinds of things, its going to be a steady mix up of trip stuff, farm stuff, fall stuff, starting on homemade xmas gifts stuff and so so much more..

Samwell’s first long and off-farm ride- The boys did great!

We did a little make do on the gear, some pulled together with extra’s that I had and we were lucky enough to borrow a bit of gear until Sam’s tack arrives, He is going to look swank when he is all done up!

This was the view most of the time, which is odd, because normally I am in front on brandy but not on this ride. It was a perfect day and weather for a lovely fall ride.

A little homemade video that was done mainly for mom, but no reason not to share it with you as well, just remember everyone is on a learning curve.

They really were a great deal of fun and its so easy to ride two pasture buddies together, loved it..
