Smoked Pan Fried Char on a bed of Green Cabbage/Sauerkraut

I was lucky enough to have some friends bring me down artic char from Iqaluit, Nunavut, Canada but good quality wild caught salmon will work in this recipe, so would fresh water trout.

This is going to make meals for two, so double if needed..

Cabbage Bed

  • One small onion, thinly sliced
  • half of a small or quarter of a large green cabbage
  • 1/2 to a full cup of Sauerkraut (based on personal taste in your own family)
  • One clove of garlic -Finely done
  • 2 tbsp. of sour cream or 2 tbsp. of yogurt or 2 tbsp. of heavy cream, or in a pinch, 2 tbsp. of real cows butter.
  • Your choice, you can also add a small granny green apple, cored, and chopped into small pieces or not.
  • Your choice, you can also add a half of a pepper, green, red or yellow for extra color if you want.
  •  Your choice, can also fried up and add mushrooms

Start with a bit of oil, your choice on what kind, cook your onion, and garlic for a min or two at med-high heat, then add your cabbage (if using apple or peppers, add them now) and cook for another couple minutes, then add your sauerkraut, heat it though

  • Add this point, add your sour cream, salt, pepper to taste, serve this up on the bottom of the plate as your side or bed
  • If you want more of a sauce then this will create, you can make a bit more of one from the fish pan, your call 🙂

Fish Side of the recipe.

Take a piece of char per person, it should be thawed, lightly flour it, salt, pepper  or montreal steak spice it, or any other spice blend that has salt, pepper, and galic in it will blend just fine..

Cast iron pan with some bacon fat or lard (or a oil that will take a higher smoke point), place your fish skin side down into a pre-heated pan/oil and let it get a good crisp on it, two to three min, once brown and golden, flip to the other side carefully and cook another two to three min, till fish is cooked, it should lose its shine and feel firmer.

If you want more sauce, take your fish out of the pan, put on a warm plate, add a bit of white wine to the pan, deglazing it, add a couple tbsp.’s of either heavy cream or sour cream and simmer it to your desired thickness, drizzle on or around the Char..

Underestimated based on looks :)

It never fails to amaze me just how much folks are judged by how they look.. It was a interesting weekend in so many ways, I will get into lots of details on the horse blog, as I took not just one but two  clinic’s this weekend, one day was all about equine dental and hoof training and care, the second was on Mounted Search and Rescue.

Now I meets some very fine ladies, and some excellent instuctors, and I had a good time and let me make this perfectly clear, I did not in any way feel unwelcome, and in fact I expect that if I was to run into at least couple of the ladies just in general life, we would stop chit-chat and if I ever went riding to some of the local events, I would feel that the weekend of getting to know them would be enough that I would be willing to head off alone and feel comfortable for the day.

But having said that, I am a people watcher, both for other and for myself and wow the amount of looks, and judgement that was taking place over the two days hit me and stuck me a bit..

They were there to read, body shifting, eyes lowering, eye rolling, crossing of legs, crossing of arms and even worse, the curl of the lip at times,  Only one got to me, there was a person, that to tell the truth I liked, but he took one look at me and dismissed me.. It was not even a underestimate, it was a clear dismissal, I was not worth his time..

I think it surprised me a bit, but I wanted him to answer two questions for me, and when I want info, I am like a dog with a bone, I will get it.. He blew me off AGAIN, the eyes went up and down my obese body and he just “knew” I was not worth answering, I smiled, and engaged again, this time he blew me off on my question based on cost!  That! was were my temper sparked..

You see I don’t really give a furry rats behind if you want to judge me based on my body, its mine, it does it job and I am blessed with remarkably good health all things considered, but to decide at a glace that I am poor pissed me off, I am frugal, and I will admit that I do drive a old paid for vehicle, and yes, my clothes are well worn and I don’t much do makeup etc, but that just means that when I WANT to do something, I do have the funds to make it happen or I will tighten the belt, save and get it done..

So I know I got the steel in the eye and my voice got just a little grr to it, and I said, I would like the name of the company offering the course,  he said, its for folks of advanced level..  folks that have spent time in the bush.

I had a choice, walk away or give a lesson, on judging a book by its cover, I could have gone girly and given info in a flirty way but I was beyond that, so I started asking him questions, one the first, he looked at me funny, but by the fifth one, as I pressed for more details and dismissed his basic’s by answering them, he finally!!  blinked and the head went back, the shoulder’s softened and he said, where all have you lived mam?

After I answered him, he went Oh, and suddenly, he wants my contact and the information I was looking for flowed forth, and it was useful and I am grateful for it, I will use in the future.

However, I watched more minor but there interactions between the rest of the folks at the clinic’s, Why do we all judge and I am not better, I did it myself, there was a person at the one that asks what I don’t consider newbie or even basic, I consider it common sense, and it bugged me that so much of the time was taken up answering questions that a month spent with your horse would give you the answers.

I think that was one thing that really struck me, the clinic’s were filled with women, and the instructors in both cases were men, the one day it was a younger man who was highly skilled in his trade and he was like going to collage and getting a really good school lecture with question and answer, he flowed like a river but his bottom line was simple

Spend time with your horse and listen to them, if they understand what you are asking of them, and they choose to act out, take the time to figure out why, rather then assume they are being bad or willful!

The second clinic had three but the one did most of the horse stuff and he was a trail rider, packer and while living in Ontario was western (alberta an B.C.) though and though, Loved listening and learning from him..

His message was simple, your horse is always learning, its only going to be as good of a horse as you help make it by doing things with it, and here was the big one, it will only go as far as your trust in it will..

That is a true statement if I have ever heard it.. If you ask your horse to do something, and you think it can’t, the odds are darn likely that you will fall, if you ask your horse to do something and you believe in they can do it, 99 percent of the time, they will prove you right..

I would love to think that one day, we will be judged by our actions instead of our looks but I don’t think that will ever truly be the case..

So tell me, when was the last time that you were judged just by looks, no time taken by the person to even try to see if you had the knowledge or skills to do it?

Its been a horse filled weekend! First ride of the year 2014

Well, Saturday I headed off for a really good equine dental and hoof clinic, and today I headed out to a horse search and rescue clinic (it had good points but not quite as good as the one yesterday) and then this afternoon, headed out with friends for the first horseback ride of 2014..  The weather broke and I think most horse folks took advantage of it and did their best to get out and ride today!

Coconut Salt Bar Soap with recipe

I made a batch of pure coconut salt soap with friends at a soap making day in Nov, Its finally ready and I love it! Ps, this is not one of my 12 soaps of 2014 🙂 Its a 2013 soap!

Its just awesome.. now they say you need to let your salt soap cure longer then the regular cold process, but I didn’t find it so.. six weeks and I was pleased as punch on how it worked out. Rich thick lather, a lovely soft feeling after washing, It seems to give your skin a polished feeling,  no colors or scent in this soap, just as pure as can be..

This bar is super simple but please don’t make it until after you have made a few basic cold process soaps, as it will trace very quickly and its odd in its heating and cutting time.. start with something a bit more forgiving then this soap 🙂

Coconut Salt Bar Recipe

  • 32 oz of coconut Oil
  • 10 oz of water
  • 5.5 oz of lye
  • 32 oz of salt added after the soap is made an at trace.

This soap was ready to be cut within an hour after being made..

2014 Give-A-Way -January- A homemade Apron

Ok, its bitter cold, its one of those days you dream of the garden, and fresh dirt and canning.. so I am giving away a bit of that summer dream.. A bright light weight full size, over the top and tied at the back homemade apron. Its will be very roomy on a shorter or average size’d lady but it will be big enough for pretty much anyone!

Frugal Friday.. Got it at a second hand shop..

Thought I would like to bring back Frugal Friday, it covers any and all topics on being Frugal..  Gotta say, was not being frugal at all in the month of nov or dec of last year but was happy to have the funds to be able to make that choice.

This year, we are going to have to be somewhat frugal on a few regular things in order to afford some of the bigger projects that have to be done around the farm, and house. Its just that simple!

Today’s frugal find was done at a second hand shop, it cost me a dollar to buy, and its made out of steel, now that is a bit of a issue on where it would be safe to sit on but it can be used to heat water, heat soup, etc  It can hold a 2 liter when totally full but not sure I would want to fill it that full, and it would be good to put a lid on it if you were going to use it for that.

Certainly not my first choice of a back up, but hey, one can never have to many backup, for backups when it comes to “non-power sources” when it comes to our cold and freezing rain laden weather related issues in our neck of the woods..

A year of giving! 12 little Give-a-ways!

Dry Rubbed Slow Roasted Pork Leg..

Well, hold on to your hats, I just spiced up and am starting cooking off a massive, fills my biggest roaster, fills the whole oven pork leg.. this is of course one of own true O mile meats, born on the farm, raised on the farm and butchered by me on the farm..

O ya baby! The first dinner with be with creamed beets, smashed sweet potato’s but then will come a number of different pork recipes planned for the blog and our tummies! Lets see how many meals I can get out of this one leg. I have some new recipes out of Pig, king of the southern table that I want to try.. lets see if they turn out as good as they read 🙂

12 Months, 12 Letters.. a promise to keep..

I know myself, this will not be a easy one to keep, I have done my best to set myself up to have success, I have bought the cards, I have bought a stamp pack, (which will only work for a bit before I will need to update it, because they raised the stamp cost) and I am putting it out here, with the challenge to take photos of the letters, maybe the stuff that goes in them, or even a bit of the letter itself depending on the month.

I love getting mail, its a thrill to walk down to the end of the road and get something in the mail box (well other then bills and even they can make me happy on some days, there is a quiet hum, when you get your bills and you check their balances and they are all paid and good) but winter is rarely the time to do it as there are three months worth of power bills that always flex and make me snarl! at them a bit, even when we keep the power use down, we still pay though the nose..

Now I know that email is faster and phone is even more personal.. but you see some of these letters are going to the little girls, and when you are six or eight, its just cool to get your own mail, I am hoping that they will start writing me back 🙂

I got poor Dh in this to.. I wrote one letter to the girls, and he wrote the other, the plan is to flip back and forth on who writes who, so that they get a bit more interaction with their uncle.

So this month, they got a lovely Christmas/Happy New Years card, with three photos in it, one of each of us with the Christmas horse photos, and one of uncle with his mighty Frog LOL

First month done and mailed out! Yes, I blanked out the mailing address for safety’s sake 🙂

Twelve months- Twelve Soaps!

There are so many things to come in the wonderful new year, but this post is about soap! I had planned on last year’s big thing being cheese/dairy but the truth was soap and lots of it, not just making it but teaching friends to make soap, giving soap, curing soap, planning soap and even dreaming about soap..

Then a one friend asked if I could show her how, by the end of the year, I had helped make this a hobby for around a dozen other folks 🙂 I had entered in two soap swaps, and I have added in new colors, new scents and I am excited to see and do new things for this coming year.

Now the truth is, I don’t sell my soap, so I am going to try (haha) to limit myself a bit this year on how many batches I make and I am going to expand, I want to make body butters, homemade lip balms, A really good Hair Shampoo Bar and a lotion bar this year!

So my average loaf is 2.5 pounds of soap, at 12 batches that’s 30 pounds worth of soap, and that does not count custom soap requests from friends or family, or swap soaps 🙂

My plan is each month make and share a soap with you, with the extra’s thrown in as they go, at the moment all plans are to make cold pressed soaps, but each month will be something extra or fun, be it liquid, colors, patterns, or styles.

I want to learn to make a cupcake soap, I want to learn to make a soap cake, I want to learn to do embeds better, I just want to PLAY!

The only two soaps that I know that I will be repeating with tweeks in the coming year are
