The “Kitchen Test” Definition

The first question I’m always asked is, “How do you define unprocessed?”
Obviously there’s a wide range of implications in that word, and we will probably each define it slightly differently for ourselves. My definition is this:

Unprocessed food is any food that could be made by a person with reasonable skill in a home kitchen with whole-food ingredients.

I call it “The Kitchen Test.” If you pick up something with a label (if it doesn’t have a label, it’s probably unprocessed), and find an ingredient you’d never use in your kitchen and couldn’t possibly make yourself from the whole form, it’s processed.

It doesn’t mean you actually have to make it yourself, it just means that for it to be considered “unprocessed” that you could, in theory, do so.

I am once again taking on the october unprocessed challenge.. its always good to find out where you have creep..  sometimes you find yourself buying something or using something that you could be making yourself. 

Examples of creep that I am aware of.. Salad dressings..  given how many salads we eat, we have taken to having a much wider then normal selection of dressing and they are all bought from the store..  its helpful and useful but at the same time, many of them could be made at home.

My biggest challenge for myself will be my sugar in my coffee..  but I have lots of honey and maple syrup in the house as well as raw brown cane sugar.. 

I am giving myself a added little push, I will do my best to make sure that as much as possable that most things come from within a 100 km of the farm..  

As always I will own up if I fail and why,  the first thing I will say is that while my food box does buy ontario/quebec when possable, canada however some of the things that come in it are from the states and even around the world.. they are however cost effective and unprocessed.. 

So the first switch of the day was my coffee.. I had to move from my favorite instant coffee to my french press with ground..  its much stronger and more bitter..

    I think I inadvertently participated in your challenge last night. Using facetime, my friend in a big city in Alberta taught me (here on Vancouver Island) how to make quinoa using my instapot. Thanks to my friend and modern technology, I have a quick and easy way to prepare an ancient whole food to add to my diet.
    I will be watching your challenge with interest!

    • I use my rice cooked to good effect, but I should do a post on it.. do you cook your Quinoa(aka pop it) before cooking it? doing so can really change the flavour profile on it.. I find it work doing if I want it for salads, and not worth doing the extra work for use in soups, or part of a flavoured side dish..

    Ah yes coffee – if only I could grow it. I use a French press or percolator – have for years. Grind the beans – flavour is a large cut above buying already ground. I decided years ago that ground packaged coffee was probably made from the dregs of the bean bag. 🤷‍♀️could never get away from the bitter taste.
    Now when I’m not being lazy, I will roast dandelion root, or barley and use as a coffee extender. The price of coffee never seems to fall.
    I hear you on the condiments. This year I made my own bbq sauce and processed it. And as you know – the hot sauce. I like to open my fridge and see more home jars than plastic squeeze bottles.
    Ultimately we do our best – but will confess, tonight we’re having store bought frozen lasagna. It’s 7.00 and feeds three people and I don’t have to dirty every pot in the kitchen. Sometimes that’s what I got left in me by the end of the week.

    • French Presses are awesome, I use them all the time for teas but I love a good qaulity instant because I can then change the strength of my coffee at whim.. I think I might have to go back to making some good cold brew overnight in the fridge so that I can make that instant change of strength.. I do keep a dandelion root coffee in the house as well for when I want decaf.. never had really liked the barley as much.. I am like you would raither see my jars, I made a number of BBQ sauces as well.. Lasagna sounds good.. There is very little now that we can get at the store so I have to make sure I have lots of premade meals in the pantry.. but I so miss pasta..
