Help a farmgal out? Share your Best Beet Salad with me.. please

Now I love beets, pickled beets, roasted beets and Baked Beets in a Cream Sauce is a huge treat!  Of course we all love our Beet soup.. hmmm

Where I am struggling is more how to successfully use beets in a salad?

I have found that the fresh tiny baby beets are good in the raw matchsticks, but not so much the storage beets and that is where we are at.. I have storage beets that are starting to sprout green tops on them.. They are not woody but they are no longer fresh/fresh, nor are they as sweet as they used to be.. they are however very deep in flavour.

So I am reaching out.. do you have a favorite way to use beets? What is your favorite dressing to go on beets? What do you think is the best beet/with X and X flavour combo you like? I have frozen and I have plain canned and pickled.. and soon enough beets will be planted out into a manure hot box as one of my first spring veggies..

right now.. right now, I need to find new ways to use up these winter storage beets.. I look forward to hearing from you 🙂

    I find that beets go extremely well with balsamic vinegar. I like grating raw beets on top of salads, or roasting them in the oven and eating them as a side, on top of salads. In terms of the pickled beets, so great next to eggs! If you are baking with chocolate, I have had delicious chocolate beet cakes, although I haven’t made them myself. I also have lots of beets in cold storage to get through…

    • Hi Amanda, Thanks so much for your favorite flavour combo’s for using beets. I like have used beets in chocolate cakes, it does indeed work very well.. I love my roasted beets, I will admit that I do not like the flavour of raw older storage beets, I do like them raw when its fresh baby beets 🙂

    I do not know if you can get pickled hering but together with beets that makes a great salad.
    500 gram of cooked beets copped in cubes
    200 gram of pickled hering in small pieces
    1 chopped apple
    1 spring onion cut into rings
    3 tbsp olive oil
    1 tbsp balsamico vinegar
    1 tsp mustard
    1 tsp honey

    I’m unsure if winter storage beets would be good with this – we have used the kind we get in a jar to make it. Husband is fond of beetroot and goat’s cheese salad in summer, so maybe that’s an idea?

    • Hi Silver, its very good with fresh baby beets, its a lovely blend for of flavours for sure, I can try it with roasted winter beets with a touch of honey while cooking to see if I can get them a touch sweeter to go in that salad. I will give it a try! Thank you..
