Breakfast for the week or supper for a crowd, when it come to the busy spring egg season, Frittata’s are a wonderful choice to be able to use up a dozen eggs in one go!
Cut into supper portions, to be served with a side salad of your choice, in my case it was a apple. sunflower sprouts, celery and fixings, it will serve 8, cut into breakfast portions, it will serve 12, Reheat in oven or fry pan without lid
This meal falls nicely into my Toonie Tuesdays, eggs locally at metro for a dozen large eggs is 3.89 cents, and i have added in another 3.75 for the quarter purple onion, the four older leftover mushrooms (they were on sale at a dollars, but we are allowed to shop the sales) I have a small portion of leftover med salsa from taco night and that added in tomato, peppers and onion dropped in small bits, the most costly was the cheese, again i got it on sale, so if it was not only sale it would have cost me another $1.50 more for the cheese.
Farmgal Tip, buy the cheese blocks or bags on sale, it freezes well, yes it will crumble more after its frozen but for most things that you use it for, this will not matter.
So if its cut into the larger 8 portions, it comes out to .95 cents each and if cut into the breakfast portions it comes out into 63 cents. But is that going to fill up hard working bellies and growing little ones, add potato’s currently you can get a 10 pound bag for 5 dollars, and that will get you between 15 to 20 potato’s depending on their size, assuming a med boiled potato or fried diced on the side, that add a extra 200 plus calories of dense filling food on the plate for a extra 25 cents
Bring the Egg and Veggie Frittata with Potato side to $1.20 Canadian dollars which at todays exchange rate would be .86 cents USD per breakfast portion.
Need to cut costs even more? Its pretty close to spring most places and that means if you look, the odds are good you can forage some early spring tender greens, make your Frittata with fresh free foraged spring greens and add the potato into the dish itself to give you a cheesy hearty portion
Now, because we are trying to lose weight and eat our greens, the salad bowl point in fact cost more to make then the egg dish. and it was tasty but with apples currently at around a dollar on their own, it was at least a 2 plus bowl. I could have brought the salad bowl price down by making it cabbage or carrot or beet based instead of apple/celery

Eggs (local) are $3.89 at Giant Tiger. Apples I always buy three bags when on sale at GT, Ontario Gala $2.88/3 lbs. I store them in a small cooler with the lid on in my cold spot. Potatoes I got at loblaws for $2/10 lbs last month. I always buy potatoes in the fall (<$2/10lbs) and store in my cold spot, covered, if I didn’t grow enough.

Thanks for letting me know, Good to know on the apple sales, hubby is picky on the types he likes and he eats a apple a day, so while i am very happy we are growing and storing our own i can’t say i am happy when we are buying them, now that i have found a fruit and veggie box again, that will help on the apple costs as they seem to come in each box and so far they have all be quebec apples which i am happy about as well for local support Canadian. I saw that sale on potato’s and it was a good one but they were fully sold out when we went, we didn’t have much potato’s from last years drought and i did buy from the local potato farm but we are out now till our early harvest ones are ready so we are buying at the store and it is on average 5 for ten pounds and even more if you want the little ones
