Freezer Camp Time for Extra Drakes

With the cold and snow coming soon? Maybe? Its been a very warm and dry November so far, my eye is on the big drakes that are running as the drake flock. I have plans to make some of my favorite duck recipes with them over the next while.

I will be for sure curing two of them into Duck Breast Prosciutto and using the meat slicer to make very fine slices indeed for my Christmas Charcuterie Board.

I have a new propane smoker that I am very much looking forward to getting set up and into use, its been sitting in its box, just waiting for the right time. What are you looking to take to the butcher or get processed in the next weeks so that you are not feeding them overwinter.
