Chocolate Cream Snow Icecream

This is a lighter version that is safe for hubby to eat..

  • 2 cups of heavy cream
  • 3 TBSP good Coco Powder (light chocolate, use more if you like it more dark chocolate)
  • 3 tbsp of Monkfruit sugar (or 1/4 cup of regular sugar if you are not diabetic)
  • 1 tsp of salt
  • 14 cups of clean snow

In a heavy pot at a very low heat, put milk, coco powder and sugar/salt together, whisk till its blended together and just warm.. you are not trying to make this hot.. just warm enough that the sugar melts in and the coco full blends into the cream.

Chill the chocolate cream till its cold.. then collect your snow, pour over and stir till it comes together..  stir it as it melts.. a lovely treat and made with the monk, it did not spike hubbies blood sugar at all!
