Current Canning Update for 2011

I just loved Andrea`s current count on her canning for the year, she is putting up for her family and it all sounds so yummy, I figured that some folks might not know that I have a Canning Log on the top of the blog to check to see what is new on the list as it goes up, so I figured I would share with a blog post, I will do another one at the end of the year totals.

    OMG-you have such a great variety of canned stuff…especially fruit. That’s awesome. Tell me what your English bread and butter pickles are like…I’ve heard of them and read a recipe or two, but is the taste that different from traditional bread and butter pickles?

    Also, where could I find a link to your spicy carrot salsa?

    • Hi Andrea,

      Ideally if all works out perfect (haha) I will put about 365 pints of fruits for the year, all different kinds, we still have a lot of fruit yet to come ripe locally, and I have been cleaning and freezing the elderberries for a better time to process and can as I am short on time, its bumper year, I have put away 11 ten cup bags so far, so there will lots of juice and the bushes are still loaded and producing like mad..

      English bread and butter, hmm, do you dirnk beer at all, its like bread and butter is light beer and English bread and butter is draft.. Its got a deeper richer flavor and the brown sugar and apple cider just gives it a more earthy flavor, but the crunch is the same, the other way I would put it, I serve bread and butter with white meat, and I serve English with dark meats.

      There is the link for the spicy carrot salsa, love it!, Its a good late fall recipe, the carrots are super sweet after light frost, and the last of the tomato`s are coming in.. just yum.

    Worst year ever! I missed so much of the summer traveling, my gardens are dismal this year and Not Far From the Tree ( my usual source of fruit) has been slim pickings this year pun intended 🙂 I’ve done 8 quarts of dills to date. I need to get cracking!
