I had one small boneless porkchop leftover and wanted to stretch it into a good size pot of hot yummy soup..
- Half a large onion, peeled, finely Diced
- One Garlic clove, peeled finely diced
- Quarter of a med size cabbage, cored and coarsely chopped
- 2 tbsp. of tomato paste
- One cut up boneless small porkchop
- quarter cup of pot barley
- quart and half of white broth or veggie broth
- quarter cup of greens- dried or fresh
Add a touch of oil or fat, fry up your onion and garlic till clear and done, then add your broth, the barley, cabbage, tomato paste, and cabbage, cook till barley and cabbage is done, then add in your greens and wilt and or simmer for a min or two
If you do not want to add the barley, consider a small potato diced and cooked with or consider replacing the barley with one cup of canned pre-cooked Black Beans.

Hey FarmGal! Pork soup is one of our favourites. We chop up a medium sweet onion, two peppers, half a bag of baby carrots, 1/2-lb of white button mushrooms and then put in a small pork roast with two cubes of chicken sauce. Sprinkle liberally with garlic powder and Montreal Steak spice and a couple dashes of Worcestershire sauce, cover with water and leave for 10 hours. At the end of cooking time we pull the meat apart (mostly it falls apart) and cut it into small pieces. We serve over noodles, put the meat and veg over rice, generally pig out until its gone. We can usually get 9-12 servings out of it, although sometimes the broth goes faster so we top up the water and add more chicken stock. Hadn’t thought about cabbage but its on the list for the next shopping trip (we are waiting for restocking – the ferry got stuck in the Cabot Straights for 3 days and the grocery store looked like it had been stripped by locusts!).
I have been following your blog for a while… and on Saturday we were both buying birds at the auction. Was so funny to see someone for real, that I only ‘know’ from this blog. So cool!!
Hi Aurel, I wish you had come up and said hi and introduced yourself, would have been great to get to meet you in person 🙂
Next time, please come over and aay hi! What did you take home from the sale
Next time I will, was with my kids and it was so tight in there. Got some rabbits and a pair of hen-rooster.
This is perfect timing! I just happen to have a large single pork chop in the freezer and have wondered what to do with it! This soup sounds great, thanks for sharing! Jan in MA
