Rabbit Chili on a bed of rice..

So I got a small rice cooker, a couple reason for it, its a max six cup cooker, and it can take plain normal rice and turn out perfect fluffy rice in about 25 min, this is awesome in for cooking for the old hound, her allergies are stiff and she had very limited carbs that she can eat, typically, she does better on freshly made warm rice or oatmeal but its a pain to make it every single day and if I am cooking supper, I often like that spot on my stove for me, so this allows me to cook her a simple breakfast, three cups of rice, a bit of whole milk, and a beaten egg added in while piping hot, cool enough to eat, and she gets a healthy rice pudding for breakfast, and now I can add in the grindings from the juicer to boot!

But it also can be used by me to cook my pot barley, and that I really like, as well as my dark red rice from the states, which is my own personal go to rice, its about the closest I can get to knowing that I am not eating China crap rice ( I store a lot of cheap rice for the critters but I pay for the good stuff for our own use) but I have a weakness, I love high quality jasmine rice. its a treat to be sure and can only be had in small amounts but o my, when its done correctly, its so so good!

So I had the last of the leftover cooked rabbit (yes, I made this a couple days ago but just have not gotten the recipe up till today), it was a regular chili, tomato based, lots of extra veggies, a good amount of potato, with a reasonable amount of mixed beans, (the potatos is nod to the hubby, who does not like beans much).. it was hot, spicy, thick and go so good..

On the bottom was a little bit of rice, a couple tbsp., then the chili, then sour cream and then fresh green onion.. a meal that was a delight in so many ways!
