O my, got this really cool greek yogurt culture and so I made a half gallon of sheep milk into yogurt, planning on draining half of it into soft cheese and half as extra thick yogurt.. well it set up perfectly in my shuttle chef, and it was firm enough that the bottom half came out in clumps that had to have breaklines done, that’s awesome.. but the taste. wow, its very very tangy, almost pushing the line on sour cream in both taste and thickness, I was expecting my regular sweet rich sheep milk yogurt and I have a half gallon of pretty much sour cream.. Idea’s? on how to use it up welcome.

I will have to see if I can find a few recipes for using it but it may take me a day or two.
thanks old school, I will have to start digging in the books as well, cuz honestly that’s alot of sour greek yogurt.. I will give this culture another try with cows milk and if it does the same, I expect it will end up a clabber/critter culture, i wonder if could use it to poach meat in..
Well, if you drain it off for a day, you could always (be forced to) make cheesecake (sorry, it was the first thing to pop into my head; )

I made yogurt last week and it wasn’t my best- it’s rather runny! Pretty sure it was a temperature thing- previously when I made yogurt I had better options to keep things warm, like the oven which was on a pilot light. I’ve also used my waterbed although that was always a a bit precarious with the cats (but it made a perfect incubator under the duvet!) Now we have a regular mattress and the new gas oven is electric start, I am going to have to be more creative.
veggie dip, sour cream is great in lots of muffins, cakes and cookie recipes, especially if you’re going for non gluten stuff and then of course, nachos, tacos etc.
