Some of my books said, up to five days in the cure, boy am I glad I was checking daily because these were ready in 48 hours in the cure, and they turned out amazing..

So, 48 hours is definitely enough then?
For these breast sizes, yes, they had the correct weight loss, the right firmness, were cured, but were not to salty, they turned out amazing!

No, I don’t, I did the 3 to 1 salt/sugar, mixed and matched spices, roasted black peppercorns, the salt was the premixed kind with the pink salt mixed in and I just added a quart of cold water and mixed and covered, I said it to Dh to.. I didn’t do measurements, just went, this and that until I was happy.. I am planning a new batch in the next day or two and will try and do meassurements and get back to you with a recipe.
that would be great…I don’t often do measurements either so no stress…just round abouts is fine
