Had a Craving for a Salmon Sandwhich..

As some of you might know, we had a bang up year for salmon in B.C. this year with one of the biggest returns they have seen in years, I was able to pick up very nice canadian wild Salmon and have been dreaming about what I am going to do with the different peices..

Well, yesteday, I got a real craving for the idea of a fresh Salmon Sandwhich for my breakfast today, its worth noting that I am not a big fan of the salmon they sell in a can, and I didn’t want all the calories from the dressing etc, I wanted to enhance the wonderful flavors of the fish but in no way overwhelm them..

So the first thing, I did was take one half of a salmon out to thraw, then I cut into my portion control peices so about 3 oz each, and placed them into a baggie, with a little olive oil, soya sauce, fresh crushed clove of garlic, and a healthy splash of Balsamic Vinager to cover the peices and then I took out the air and placed in the fridge for about 18 hours or so. 

This morning, took out my trusty well seasoned little cast Iron frying pan, I didn’t feel the need to add more oil, as I had it in the brine, Med heat, and cooked about 2 min max per side.. Here was the results..

I will tell the truth, I devoured the one peice just as you see it on the plate.. so perfertly cooked, moist, flavorful and bursting with flavor.. but for the second piece, I mashed it up with its own juices to create this little breakfast sandwhich..
